Finally, let us share the most delicious recipe for making lavender syrup!
To create lavender elixir, prepare:
- 1 liter of water
- 1 kg of brown sugar (you can use less, according to your preference)
- 1 lemon (ideally without the peel)
- 3 teaspoons of citric acid
- 2 handfuls of lavender (use both stems and flowers)
Let’s get started:
Thoroughly rinse freshly picked lavender, cut it into smaller pieces, and place it in a larger container. Boil the water and pour it over the lavender. Add the peeled lemon cut into slices and 3 teaspoons of citric acid. Stir the contents of the container and let it sit on the counter for about 24 hours.
The next day, strain the liquid through a sieve or cheesecloth into a clean container. While stirring continuously, add the kilo of sugar and mix until dissolved, then pour the syrup into boiled, sealable bottles or jars.
You have just conjured your own cold-made lavender syrup. Cold processing preserves more active ingredients! Store the finished syrup in the refrigerator. It tastes best with sparkling water, ice, and lemon. You can also use it to flavor teas, or even for insomnia and headaches. :)
